70% Rkatsiteli, 30% Kisi. Aromas of ripe pear, apple, honey, toasted almonds, and subtle wild herbs. A soft creaminess, refined oak notes, and a hint of Qvevri structure give depth and elegance to this layered, captivating wine.
Domain
Nugzar Ksovreli of the Kakheti Wine Company crafted the iconic Saperavi wines from the Kakhetian region from the vineyard owned by the Konchosvili family. Swiss winemaker Thierry Fontannaz was fascinated by the centuries-old Georgian winemaking techniques and was inspired to create Bedoba from the Saperavi wines. The wine cellars date back to 1533, when traditional Kakheti wines were produced and sold here. The estate is located just north of the Alazani River and is situated 400 meters above sea level.
Soil
The Rkatsiteli grapes come from 25-year-old vines, grown on 8-meter-deep black loam soil. The Kisi grapes come from younger vineyards, planted closer to the hillside in a cooler microclimate on calcareous soil.
Harvest
Both the Kisi and Rkatsiteli were harvested in mid to late October.
Vinification
Kisi is fermented as whole bunches in qvevri and matures there until December with malolactic fermentation. Rkatsiteli is destemmed and fermented in stainless steel, aged on fine lees, and then 30% in oak barrels. The BEDOBA White cuvée is composed of 70% Rkatsiteli (30% oak-aged) and 30% qvevri-fermented Kisi, resulting in a rich, well-balanced wine.

A very versatile wine that pairs beautifully with roast chicken in lemon-thyme butter, grilled scallops, or aged Comté cheese with a touch of honey.
